In the early days this was a sour mashed beer but has since evolved to the beer it is today... Aged in a Foeder and barrels fermented with a mixed strain of wild/funky yeasts & Lactobacillius. Complex, tart & refreshing, each batch varies depending on the fruit we decide to age it with.
